At INDIDOG we cook and with pride: fresh food, great drinks, and warm, professional hospitality on the harbour wall. We’re recruiting early for 2026 because we want the year to feel supported. 
We’ve got a solid core of long-standing people and this year we are pushing further forward. INDIDOG’s continued success now requires us to further strenthen the team across both kitchen and front of house.

THE SOUS CHEF ROLE

We’re looking for a strong, calm Sous Chef to support the Head Chef and help lead a busy, quality-led kitchen on the harbour in Falmouth. This is a hands-on role for someone who can run service, keep standards consistent, and coach the team — without drama.

Our current team has a great core and we’re recruiting early for 2026 after our Sous Chef stepped up into his first Head Chef role.

Start: Feb/Mar 2026

What you’ll do
• Lead sections and support the pass during busy services
• Drive consistency: prep, portioning, plating and pace
• Support training and standards across CDPs/commis/KP
• Help with ordering, stock rotation, waste reduction and labelling
• Maintain hygiene/allergen systems and daily cleaning discipline
• Contribute to specials and menu development in a cost-aware way
• Step up to run service when the Head Chef is off
What we're looking for
Sous Chef experience (or a very strong Junior Sous ready to step up)
• Calm leadership style and good communication
• Strong prep discipline and organisation
• Fresh food background and pride in consistency
• Food safety/allergens awareness (Level 2 minimum; Level 3 ideal)

THE RESTAURANT MANAGER ROLE

We’re bringing in a brilliant Restaurant Manager to lead front of house into 2026. This is a genuine leadership role to provide clear structure and support so the team can deliver consistent, confident service every day.

You’ll be hands-on, standards-led, and great with people, guests and staff alike.

Start: Feb/Mar 2026

What you'll do
Lead daily FOH operations: service standards, pace, warmth and consistency
• Recruit, train and develop the team (and set clear expectations)
• Own reservations & table management (ResDiary), diary health and floor flow
• Drive sales through great hosting, upselling and team coaching
• Work with owners/chefs on events, seasonal moments and service delivery
• Manage rotas, breaks, labour control and shift planning
• Handle feedback professionally and protect guest experience
• Keep compliance basics tight: cleanliness, checks, licensing awareness etc.
What we're looking for
• Strong experience as Restaurant Manager  in busy, seasonal hospitality
• Calm, confident leader who can set standards kindly but firmly
• Great communicator, organised, and good at building team rhythm
• Loves service. Details matter, but so does energy and warmth
• Comfortable with bookings systems and basic numbers/labour planning
• Comfortable with conflict resolution

CHEF DE PARTIE

FRESH FISH, INDIDOG RESTAURANT FALMOUTH, CHEF WITH FRESH FISH
Chefs at INDIDOG restaurant in Falmouth, Cornwall are calm, skilled and positive.

We’re hiring three CDPs who can run a section with pride, pace and consistency. You’ll be joining a long-standing kitchen team and a restaurant that cares about standards and teamwork — we want people who show up, crack on, and keep things positive. Each starting date will phase from Feb to April. We also have roles that are available Apr – Oct part time. These are bi weekly, hourly pay roles.

What you'll do
• Run your section confidently through prep and service
• Work clean, fast and organised with strong mise-en-place
• Follow specs, portion control and plating consistently
• Support commis/KP and contribute to a good kitchen culture
• Help with stock rotation, labelling, waste control and cleaning
What we're looking for
• CDP experience in a fresh-food kitchen (or strong Demi ready to step up)
• Reliable, tidy, consistent and calm under pressure
• Good attitude — team-first, no ego
• Interest in learning and improving with a solid brigade

Supervisor Front of House

We are in no rush to hire this person and in truth, we hope to see someone from the current team step into this role but…there is always room for 2 supervisors at INDIDOG. It’s a busy restaurant and it needs a strong, energetic team. This role is perfect if management is the direction you’d like to take. This is not a junior role. If you’re brilliant at service and want to learn how to move up, could this be your next job?
